Cat Cora Biography | Who Is Cat Cora?

Cat Cora (Catherine Ann Cora) is an American professional chef, author, restaurateur, contributing editor, television host and personality, actress, avid philanthropist, health and fitness expert, and lifestyle entrepreneur.

She has served up her culinary knowledge as a judge on ABC’s competition series Family Food Fight and founded Little Kitchen Academy, a Montessori-style culinary school for ages 3-teen.

Outside the kitchen, she is known for her philanthropic efforts. Cora is the President and Founder of Chefs for Humanity.

Chefs for Humanity is an organization that originated in response to the 2004 Tsunami disaster. The foundation is dedicated to reducing hunger worldwide by supporting humanitarian relief and promoting nutrition education.

She is also a prominent published author of three successful cookbooks, one children’s book and, in 2015, her raw and remarkably candid memoir called Cooking as Fast as I Can: A Chef’s Story of Food, Family, and Forgiveness.

Cora partnered with WW on a first-of-its-kind health food destination inside Barclays Center in Brooklyn, called WW FreestyleTM Café: BKLYN in 2018.

She was also proud to be featured in the permanent collection of the Mississippi Arts + Entertainment Museum’s Kitchen Table exhibit in Meridian, Mississippi.

Cora was born to Virginia Lee (née Brothers) and Spiro Pete Cora. Cora’s paternal grandparents were from Skopelos, Greece. Her Father Spiro and grandfather were restaurateurs.  Cora was raised by a family for whom cooking and eating were the centers of life.

Meals from her family’s house often combined spices from the South with fresh cheeses and home-cured olives sent by relatives from the island of Skopelos.

Cora brought a business plan to her father and grandfather at the age of 15 knowing that they could help her. She earned her Bachelor of Science degree in Exercise Physiology and Biology from the University of Southern Mississippi and then enrolling at the Culinary Institute of America in Hyde Park, New York.

Cora has partnered with various corporations include Macy’s, when in 2008 they opened Cat Cora’s Que (CCQ), a restaurant in Costa Mesa, California.

She was a co-host of the Food Network show Kitchen Accomplished and launched her own line of cookware in conjunction with Starfrit, Canada’s leading purveyor of food preparation products in 2011.

Cat also co-founded Chefs For Humanity in January 2005, it describes itself as “a grassroots coalition of chefs and culinary professionals guided by a mission to quickly be able to raise funds and provide resources for important emergency and humanitarian aid, nutritional education, and hunger-related initiatives throughout the world.”

She is the co-host of the American reality competition show Around the World in 80 Plates alongside Curtis Stone. It premiered on May 9, 2012, on the Bravo cable TV network. The show follows twelve chefs competing in a culinary race across ten countries in 44 days.

WW BAKED JALAPENO POPPERS

Total Time: 55 minutes

Prep:15 minutes

Cook Time: 30 minutes

Serves 1 

INGREDIENTS

crumbled feta cheese, 4 tsp

plain fat free Greek yogurt, 1 Tbsp

fresh oregano, ¼ tsp, finely chopped

panko breadcrumbs, 2 Tbsp

black pepper, 1 pinch, or to taste

plain fat free Greek yogurt, 1 Tbsp, for garnish (optional)

lime zest, â…› tsp, or to taste, for garnish (optional)

INSTRUCTIONS

  1. Preheat oven to 350°F.
  2. Cut jalapeño in half lengthwise, cut off stem, and scrape out seeds; set aside.
  3. Combine feta, yogurt, oregano, and garlic powder in a cup. Combine panko, salt and pepper in another cup.
  4. In a small bowl, whisk egg.
  5. Divide cheese mixture between jalapeño halves. Dredge each half in egg mixture, then roll in panko, pressing lightly so panko sticks to jalapeño.
  6. Gently set coated peppers, cut side up, on a small sheet pan. Bake until filling is bubbling and panko is golden, about 30 minutes.
  7. Remove from tray, allow to cool for 10 minutes, and serve while still warm (add an optional topping of plain nonfat Greek yogurt mixed with lime juice, lime zest and salt).
  8. Makes 1 serving (2 poppers).

ZUCCHINI TOTS WITH FETA-MINT TZATZIKI

INGREDIENTS

For the feta-mint tzatziki:
1 cup greek yogurt, such as Fage
2 tablespoons crumbled feta cheese
1 tablespoon fresh lemon juice
2 tablespoons extra-virgin olive oil
1 clove garlic, minced
1 teaspoon kosher salt
2 teaspoons finely chopped mint
1 medium cucumber, peeled

For the zucchini tots:
6 medium zucchini, ends cut off
2 large eggs, beaten
1/2 cup shredded cheddar
1/2 cup grated Parmesan
1 teaspoon finely chopped oregano
1 clove garlic, minced
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

INSTRUCTIONS

1. Make the feta-mint tzatziki: In a medium bowl, combine yogurt, feta, lemon, olive oil, garlic, salt, and mint. 

2. Using the finest side of a box grater, grate the cucumber directly over the yogurt mixture. Stir to combine. Cover and place in the refrigerator for at least an hour or overnight.

3. Make the zucchini tots: Using the finest side of a box grater, grate zucchini to make about 3 cups. Transfer to a clean, low-lint linen cloth. Wring out as much moisture as possible.

4. In a large, metal bowl, gently mix zucchini with eggs, cheddar, parmesan, oregano, garlic, salt, and pepper.

5. Using your hands, take about 2 tablespoons of tot mix and form 1-inch-long and quarter-sized around tots. Squeeze out excess moisture, if necessary. Repeat with remaining mixture. Freeze tots for about 2 hours or overnight.

6. Place frozen tots into the air fryer tray. Air fry at 270 degrees for 10 to 12 minutes. Check and rotate tots about halfway through for even crisping. Serve warm with a side of feta-mint tzatziki.
